1 whole firm ricotta
Mixed seasonal vegetables
Salt & pepper
Chop up a variety of seasonal vegetables into desired sizes. Drizzle vegetables with olive oil, salt and pepper. Bake on 200C fan-forced for about 30 minutes. Depending on the type of vegetable, the cooking time will vary. Keep an eye on them and check for softness.
Line a baking tray with baking paper. Place whole ricotta on tray; drizzle with olive oil and honey. Sprinkle thyme over the top. Bake for 25-30 minutes on 180C fan-forced.
Transfer baked ricotta to a serving platter and dress with the roast vegetable medley. Drizzle more EVOO and honey over the ricotta. Top with fresh thyme. Serve with fresh bread!
