A Lemony Creamy Dream with Therese Lum

Ingredients

200g thickened cream 

60g caster sugar + extra for brulee 

1 lemon, zest 

30g lemon juice 1 tsp 

Vanilla paste (optional) 



Method 

1. Cut 3 lemons in half and scoop out the flesh. Squeeze out lemon juice using a sieve. 

2. Combine cream, 60g sugar and lemon zest in a pot and bring to a slight simmer for 3-4 minutes to reduce the mixture. Remove from the heat and add lemon juice & vanilla paste. 

3. Mix and sieve mixture to remove lemon zest. 

4. Fill hollowed lemon halves and chill in the fridge for at least 2 hours, or overnight. 

5. Once set, sprinkle some sugar on top and blowtorch until the sugar is caramelised.
