This recipe combines creamy ice cream with festive flavours to create a centrepiece for your holiday table. Say goodbye to the fuss and hello to a truly indulgent way to end your Christmas feast!
Ingredients (Serves 8+)
100 gm glace pineapple, chopped
100 gm glace cherries, chopped
50 gm glace ginger, chopped
2 cups mixed dried fruits, grated
Rind of 2 oranges
A pinch of cinnamon
A pinch of nutmeg
A pinch of mixed spice
Grand Marnier
¾ cup chocolate bits
4 litres vanilla ice cream, softened
A mixture of fresh berries
Icing sugar
Method
1. Mix together the glaced and mixed dried fruits, orange zest, spices, 4 tbsp Grand Marnier and chocolate.
2. Stir the ice cream into fruit mix. Then line a large stainless steel or glass bowl with plastic wrap and spoon in the mixture. Cover with more plastic wrap and freeze overnight.
3. When ready, unmould the pudding onto a large platter. Sprinkle berries with a little more Grand Marnier and place around the pudding.
4. Serve sprinkled with icing sugar.
