Lisa Holmen's Mediterranean Pasta Salad

Spring in finally here at last, and as we may not be able to travel to the Mediterranean right now, we can still transport our tastebuds! Bring a slice of the ‘Med’ to your table with this delicious Mediterranean pasta salad made with my favourite Kip&Co tableware. This collection is so beautiful and vibrant and is perfect for both indoor and outdoor dining. Enjoy! xx

Mediterranean Pasta Salad Recipe

·       400g spiral pasta
·       250g cherry tomatoes, halved
·       1 cucumber, diced
·       ½ red onion, thinly sliced
·       2 cups of greens (combination of baby spinach or rocket)
·       1/3 cup of parsley, chopped
·       1 cup of mixed olives, pitted and sliced
·       1/2 cup feta
·       ¼ cup roasted red bell peppers
·       Salt and pepper to taste
·       1/3 cup extra virgin olive oil
·       1/3 cup red wine vinegar
·       1 tsp dried oregano
·       1 clove garlic, minced
·       2 tsp Dijon mustard
·       2 tsp honey
·       Salt and pepper to taste

1.   Cook pasta until al dente. Drain and allow to cool.
2.   To make the dressing, combine all the ingredients in a sealed jar and shake vigorously until well combined.
3.   Combine pasta, tomatoes, cucumbers, red onion, greens, parsley, olives, feta and red peppers in a large bowl.
4.   Drizzle the dressing on the salad then gently toss all the ingredients together. Serve immediately!
