Breakfast: Green smoothie & porridge (or just fruit, depending on my mood)
Lunch: Huge salad with an abundance of fresh produce, plus some tempeh, nuts, seeds, and cooked starchy veggies (this is my main meal of the day, so I make sure it’s packed with vitamins and minerals and hearty enough to sustain me for the rest of the evening! I make all my own dressings, which I think makes all the difference!)
Dinner: I often skip dinner, but if I do have dinner it’s usually something light…like some fruit or steamed veggies. If I’ve had a big day of sport I might have something more substantial like gnocchi or baked veggies.
Dessert: If I’m having dessert. My favourite thing to make is chocolate mousse with young coconuts…it’s definitely my go-to when trying to impress people!
Berry baked oatmeal
Ingredients
1 cup rolled oats
2 eggs
2 ripe bananas
1/4 tsp vanilla powder
1 tsp baking powder
1/4 cup mixed fresh berries
1 tbsp raspberry jam
Topping:
Flaked almonds
Fresh whole blueberries, blackberries and raspberries
Sliced strawberries
Method

Preheat oven to 180*C

Blend together the oats, eggs, bananas, vanilla and baking powder until smooth.

Pour into @kipandco snack tray, and stir in the jam and fresh berries.

Top with berries and flaked almonds, then bake for 15-20mins, until golden and cooked through.

Delicious on its own or served with yoghurt or ice cream.
Chocolate chip baked oatmeal
Ingredients
1 cup rolled oats

1/4 tsp vanilla powder
1/4 tsp cinnamon
1 tsp baking powder
1/4 cup chocolate chips
Topping:
Flaked almonds
1 tbsp chocolate chips
Banana slices
Method

Preheat oven to 180*C

Blend together the oats, eggs, bananas, vanilla, baking powder and cinnamon until smooth.

Pour into @kipandco enamelware snack tray, and stir in the chocolate chips.

Top with the extra chocolate chips, banana and flaked almonds, then bake for 15-20mins, until golden and cooked through.
