Baked goodies with the Sunkissed Kitchen

We chat to Ami Shoesmith, the mastermind behind the bright & colurful foodgram @the_sunkissed_kitchen, and get to know what a day on her plate looks like. And, of course, we had to get some epic recipes off her to try for ourselves featuring our brand NEW enamelware collection!

1. Tell us a little bit about yourself! Where are you from and what do you love doing outside of cooking?

I live in Byron Bay, and apart from cooking I love: playing tennis and soccer, writing, visiting farmers markets, beach walks, hiking in nature, foraging, reading, and spending time with my friends!

2. How did your love for cooking come about?

I’ve loved cooking for as long as I remember. My dad is an amazing cook and taught me a lot growing up. Mum told me that I was always asking her to take me outside to forage when I was a toddler…so I suppose it was inevitable that I’d end up working with food as an adult.

3. What does your day on a plate look like ? Go-to breakfast, lunch, dinner and dessert?

Breakfast: Green smoothie & porridge (or just fruit, depending on my mood)

Lunch: Huge salad with an abundance of fresh produce, plus some tempeh, nuts, seeds, and cooked starchy veggies (this is my main meal of the day, so I make sure it’s packed with vitamins and minerals and hearty enough to sustain me for the rest of the evening! I make all my own dressings, which I think makes all the difference!)

Dinner: I often skip dinner, but if I do have dinner it’s usually something light…like some fruit or steamed veggies. If I’ve had a big day of sport I might have something more substantial like gnocchi or baked veggies.

Dessert: If I’m having dessert. My favourite thing to make is chocolate mousse with young coconuts…it’s definitely my go-to when trying to impress people!
